Chicken with sweet potato and apple

The girls had a real homecook meal today!!! Chicken with sweet potato and apple......the recipe is a bit more complicated unlike the usual-only boiling and pureeing. And I was so happy because the girls simply love it! The recipe was taken from Annabel Karmel baby recipe book.

1 tablespoon unsalted buttter
1/4 cup chopped onion
4 ounces boneless, skinless chicken breast, chopped
1 large sweet potato (12 onces), peeled and chopped
1/2 apple, peeled, cored, and chopped
1 cup chicken stock

Heat the butter in a saucepan, add the onion, and saute for 2 to 3 minutes. Add the chicken and saute for a couple of minutes until it turns opaque. Add the sweet potato and apple and pour in the stock. Bring to a boil, then cover and simmer for 15 minutes. Puree to the desired consistency.

** Food fact: Chicken is an ideal "growth" food, as it is packed with protein and vitamin B12, which is not found in plants.

As for the chicken stock, I boiled the chicken in a small pot of water. Added 1 stalk of celery and 2 cubes of onions. It will be nice to add carrots (unfortunately, I don't have any in my fridge today!), a little peppercorn and a sprig of thymes. No SALT please!!!
